Commitment to Deliciousness

Delicious rice starts with the cultivation of the soil in the fields!

Every year, we enrich the soil with a generous amount of organic fertilizer in the rice fields. Since the farmer also runs a cattle farm, there is an ample supply of organic fertilizer.

Safe and secure

By using a large amount of organic fertilizer, we use only a small amount of pesticides and chemical fertilizers. Chemical fertilizers are used at less than 20% of the usual amount, and pesticides at less than 40%. This ensures delicious rice is harvested in the fall.

Harsh temperature variations and free-growing rice cultivation

At the foot of Mount Chokai in Akita Prefecture, we use mineral-rich spring water flowing from the mountains to plant rice seedlings with a wider spacing than usual, allowing them to grow vigorously.
The temperature difference between the cold nights and hot days, along with careful water management throughout the year, enhances the flavor of the rice.

To create the best-tasting sushi rice, we spent a year and a half in trial and error to perfect a sushi vinegar that matches our "stubborn old man" recipe.
