Unlike mass-production farms, we keep the number of salmon per section low to avoid overcrowding, allowing them to swim freely and develop strong muscles and good health.

High quality achieved through glacier-provided environment and superior feed

The sea from the glacier at Gold River on Vancouver Island is cold and clear. Additionally, with strong tidal currents and a perfect saline environment, coupled with high-quality feed, the distinctive smell of farmed salmon is minimized, resulting in a milder-tasting salmon.

“Speed” and “Chilling” for Freshness and Enhanced Flavor

Harvested from the sea to the ship using vacuum technology, processed with bacterial checks and in a fully automated processing plant, and packed. Arrives in Japan (Narita Airport) in as little as 33 hours from landing. During air transport, the boxes are packed with ice at a lower temperature than usual to preserve freshness and enhance flavor components.

Craftsman’s Expertise and Cutting

Upon arrival in Japan, we process the product at our Akita factory using "chilling" to enhance the umami component by twice, and "salting" to remove excess moisture, ensuring the freshness is preserved for about twice as long(According to our research).
